“I have come to realise that food as an art form is a performance, it needs careful choreographing, rehearsal and a strong artistic instinct from the creator! From here there is only one outcome, successful communication of taste, concept and theme. The anticipation, organization and co-ordination of a culinary event is as important as the end product. Obviously in this I am not saying that the end is not important, but that the means to get there are of greater value for the creator and so maybe the audience.”
